Tartaric acid, 2, 3-dihydroxysuccinic acid, is a carboxylic acid with the formula C4H6O6. Found in a variety of plants, such as grapes and tamarind. It is also one of the main organic acids in wine. As an antioxidant added to food, it can give food a sour taste. The largest use of tartaric acid is beverage additives, but also pharmaceutical industry raw materials.

- As emulsifier and preservative in the bread-making industry and in the preparation of candies and sweets.
